Grilled Beef, Mashed Potatoes, Green Beans and Demi-glace

There is another approach to cooking this meat, which enhances the flavour and natural taste of this gorgeous meat

Makes 4 Servings
Beef tenderloin
2 tablespoons english mustard
4 tablespoons olive oil
Fresh herbs
Salt and pepper
16 pieces green beans
750ml beef/lamb demi-glace
For the mashed potatoes
500g irish potatoes, peeled, boiled and mashed
2 tablespoons unsalted butter
3 tablespoons cooking cream
Salt to taste

1. For beef marinade, combine mustard, fresh herbs, salt and pepper, olive oil. Spread evenly on the beef
2. Lay cling film on a board/table, and place marinated beef. Roll tightly and knot both sides
3. Put in refrigerator set to 5°C/41°F and allow to set for 20 minutes
4. When set, cut to desired portion size. Unwrap and seal on the grill for 2 minutes on both sides. Put in the oven for further cooking
Mashed Potatoes
1. Heat butter in sauce pan on low heat to medium heat
2. Add in mashed potatoes. Stir
3. Add cooking cream. Season, mix properly till smooth.
4. Correct seasoning
Green beans
1. Blanch green beans in salted water
2. Heat oil in saucepan. Saute green beans. Season with salt

Serve beef with mashed potatoes, green beans and demi-glace

Tips: Beef tenderloin can be wrapped with aromatics to enhance flavour
