The Georgian Caramel : Ojakhuri

Hello Hello!

It’s been a while here, I’ve been trying to put make some adjustments which is well needed ☺ I hope you guys are good? I know you have been expecting a post or few from me. Well I have a little twist today and I will want you to try this at your spare time, it could be for dinner or breakfast, whichever suits you. 

This recipe I got when I went on vacation to Tbilisi, Georgia with my manager ☺ it was amazing and I could not resist it. We had it twice to show you how good it was. 

This dish is called Ojakhuri (from the name alone you know it is heavenly) Basically this dish is a combination of Pork/Beef and Potatoes.

Another information you need to know is this “Ojakhuri” is the generic name for meat, usually pork. If you don’t like pork in your dish you can substitute with beef. This Ojakhuri can also play out as a salad, behold its versatility 😂 

Now I would give you the list of ingredients used in making our delicious meal

  • Pork/Beef
  • Potatoes
  • White wine
  • Onion, red
  • Cooking oil
  • Salt
  • Cilantro, garnish
  • Sour cream (optional) 

The ingredients listed above are the basics, as the major protein, chicken can also be used. The hidden tip to get the flavourful meat item is to marinate prior to cooking and it is best deep fried… Whoooola 

For the measurement of ingredients, the proportion of protein to potatoes is 500g to 400g, which is Pork 500g and potatoes 400g. If you don’t do wine, it can be substituted for white wine vinegar 🕺🏼. Other ingredients which can be added includes tomato puree 🍅 white pepper, bay leaves.

Here is the prep method ……

Cut meat in cubes, cut onion to thin slices and combine both in a bowl. Add in 🍅 puree, sour cream if using, white wine, vinegar, bay leaves, salt and pepper. Yipee!! Do this at least 12 hours before cooking time, for flavour enhancement. 

Next step… Peel and cut potatoes, but I would like my potatoes washed with skin on (more flavour you know)  😉 heat oil, deep fry for 10 minutes until crispy, you can salt your potatoes if you like. Next is to fry the marinated meat slightly in oil. Here is a tip, when you remove the meat from the marinade fry in oil, set the marinade aside and heat in a pot (remember pork is fatty and fat is flavour) then remove from oil and put in the hot marinade, cook on high heat for 3 to 4 minutes and remove. 

Final step is to separate the liquid from the cooked item and then combine with the fried potatoes. Garnish with fresh cilantro(coriander) trust me it’s an extra flavour. 

And then……. 

Your ojakhuri is served, don’t forget to eat with something chilled.
